1 cup + 4 tablespoons For the Love of Pancakes Mix

2 tablespoons Coconut Oil or Olive Oil

1 cup Water 

1 teaspoon Vanilla Extract 

Handful Blackberries


2 tablespoons Maple Syrup

1 handful Blackberries 

1/4 cup Water


1) In a mixing bowl whisk together the water, oil and vanilla, then add it to your For the Love of Pancakes Mix.  Stir until only a few lumps remain then fold in your blackberries. 

2) Let the mix rest and begin heating your skillet on low-medium heat.  You're ready to start when you sprinkle a couple drops of water and they sizzle. 

3) Pour the Batter into the skillet in 1/4 cup scoops.  Cook until you see small bubbles and the edges start to dry then flip.  Cook for 3-4 minutes on the other side.  I personally wait until I see the fruit start to bubble on the other side so I know it cooked through. 

4) For the syrup add the ingredients to a pan and turn the heat on medium, as it begins cook try and smash some of the berries but leave a few in tact.  Then add your blackberry syrup to your pancakes!
