Ingredients

1 cup of Quinoa

1 Red Pepper

2 cups of Spinach

1 Red Onion

2 stalks of Broccoli

2 tsp Himalayan Sea Salt

2 tsp Coriander

1 tsp Ginger

1 tsp Cumin

1 tsp Curry

1 tsp Cayenne

Dash of Thyme

Directions

1. Begin by rinsing 1 cup of uncooked quinoa in a fine mesh strainer.  Add the quinoa to a saucepan and add 2 cups of water and bring to a boil then reduce the heat to low and leave it covered to cook for 15-20 minutes.

2. Cut up the broccoli, pepper, onion and add it to the pan with the spinach.  Also, add a spoon full of coconut oil and put the fire on medium heat and add in the spices.

3. Stir the vegetables so they cook evenly. Cook for 7-10 minutes, don't overcook them the broccoli should still have a slight crunch. 

4. Once the quinoa is cooked add it to the vegetables and mix them together then you're all finished in 20 minutes.

This is a really quick and very affordable dish, play around with your spices pretty much whatever you have in the cupboard will work.  It's only 5 ingredients not including the spices, cooking doesn't get much simpler.  This makes enough to feed a family of 4 but if you're a single household store this in the fridge and you have a couple meals for the next few days.
