Prep

Cook organic brown jasmine rice before assembling the salad letting the rice cool off to not allow the heat from the rice and the fresh salad to mix.

Directions

Add however much lettuce and spinach you desire, I personally filled my plate to the top. Wash and dry before.

Next, peel and cut the mango into medium chunks adding them to the salad.

After, sprinkle 1 tsp. or moor of hemp seeds and squeeze however much lemon is your preference.  Toss all ingredients together mixing well.

Grab a small glass bowl and fill with rice to obtain a ball of rice in the middle of the dish. In-joy this sweet and tangy rice salad that is perfect for lunch or as a pre-meal.

Benefits

Spinach is a green leafy vegetable that are important for bone health, skin & hair, protein, iron, vitamins, and minerals.  Ever wonder why Popeye ate spinach and instantly got big muscles?  Because spinach is full of protein that is were most of its 41 calories come from.  Spinach is also high in potassium and water content, which are good for the digestive tract.  Also, spinach promotes healthy bones because they're high in vitamin K, which is also good for calcium absorption thanks to our body’s friendly microbial bacteria.
